Pepperoni Chicken Parmesan

Pepperoni Chicken Parmesan is one of the highest searched recipe in google for 2017. It is really a appetizing finger licking platter with Italian touch that brings a twist in the taste. Chicken itself being a popular subject in every table of a dinner or lunch and is always a favorite bite specially for children  and teen age groups. Adding of variations of cheese and seasoning into it makes it even more blissful and a must for every foodies.

Ingredients

  • 4 boneless , skinless chicken breasts
  • 1/3- cup all-purpose flour
  • 1/4- cup bread crumbs (use panko crumbs if possible)
  • 2 garlic cloves , Finely Chopped 
  • 1/4- cup grated parmesan cheese
  • 1/2- tablespoon Italian Seasoning
  • salt and fresh ground pepper , to taste
  • 1/4- cup skim milk
  • 3 tablespoons olive oil
  • 4 slices part-skim mozzarella cheese
  • 10 to 12 pepperoni slices
  • 1 cup halved cherry tomatoes

Instructions

  1. Preheat oven to 400F.
  2. In a ziploc bag combine flour, crumbs, garlic, parmesan cheese, italian seasoning, salt and pepper.
  3. Pour the skim milk in a bowl.
  4. Heat olive oil in a large skillet/ Frying Pan.
  5. Dip chicken pieces in the milk and transfer to the bag with the panko crumb mixture.
  6. Toss to coat.
  7. Remove from bag and add chicken to the skillet/ pan.
  8. Cook for 1 to 2 minutes on one side; flip over and continue to cook for 1 more minute or until slightly browned.
  9. Place skillet in the oven and bake for 10 minutes (if you are using frying pan instead, transfer the chicken in a micro-oven tray) ; flip over chicken and continue to bake for 8 minutes.
  10. Remove from oven; place mozzarella cheese slices over each chicken piece, top with pepperoni slices and halved tomatoes.
  11. Place back in the oven and bake for 7 to 8 more minutes, or until cheese is melted.
  12. Remove from oven and let stand couple minutes.
  13. Serve.
